Carrot cake with cream cheese frosting topped with walnuts

* Ingredients : 

+cake mix:

°1 box of yellow cake mix

°3 eggs

°1 cup of water

°1/2 cup apple juice

°2 cups grated or food-processed carrots.

°Mix until smooth and free of clumps.


In a separate bowl is added

4 oz. of room temperature fat-free cream cheese

1 tsp sweetened condensed milk

3 tablespoons of powdered sugar mixed with 2 12 tbsp. from water

Using a hand mixer, beat the mixture until smooth and creamy. sit aside

30g chopped walnuts This is where you want to use your scale. You will get more secrets for points 🙂

Bake for 45-50 minutes or until skewer inserted comes out clean, this one is tricky though if the skewer came out clean it could have done in 5 more minutes, ovens vary so check at 45 minutes.

Let it cool for 20 minutes before turning it into your chosen dish.

When you're ready to freeze, make sure the icing is thin enough to drizzle. If it's not, you can microwave it for 10 seconds at a time until it softens. Don't overcook the cream cheese.

Freeze or drizzle your cake any way you like it. Top with walnuts for a crunch to go with this moist cake and why not add some grated carrots for a little color.
