Lemon cake with lemon




*Ingredients


+ To prepare cakes:

°2 eggs

°2 cups of sugar

°1 bag of vanilla sugar

°1 cup of milk

° 3 cups of flour

°One package of dry yeast

° 1 cup of oil

°6 cl of lemon juice

° Lemon flavour

+ for the cream (lemon card):

° 6 lemons

°250 grams of sugar

°3 eggs

°100 grams of butter

° Lemon flavour

For cake:

Preheat the oven to 6 degrees (180 degrees Celsius).

In a bowl, gradually mix the eggs, sugar, vanilla sugar, milk, flour, baking powder, oil, lemon juice, and zest.

Butter the cupcake molds and pour the mixture into them (or pour it directly into the cupcake tins).

Bake for 15 minutes, then let cool.

To prepare the curd:

In a glass bowl, whisk the eggs. Add sugar and butter and mix.

Grate the zest of 2 lemons and add them to the salad bowl.

Squeeze the remaining lemon. We add them together with their juice, mixing with a wooden spoon.

In a saucepan, boil water and place the bowl over it (bain-marie).

Stir constantly for about 15 minutes, until the cream thickens and coats the spoon well.

Then spread the cream on the cooled cupcakes with a decorative bag and decorate with lemon zest.
